Roasted Garlic

Ingredients:
2 large heads of garlic
1T olive oil

Directions:
Slice off the top third of the garlic head, sprinkle with olive oil. Wrap in tin foil and bake at 400F for 15-20 min until garlic is soft.
Cool, then squeeze out cloves.

The resulting paste can be used in a variety of ways (see Soup recipe). Try it also on a piece of toast or baked potatoes and a variety of vegetables.
