Oven Roasted Carrots
Ingredients:

2 pounds carrots
Olive oil
Coarsely ground pepper

Peel and cut carrots into even sticks, ½ x 2 inches
Toss with olive oil and pepper
Preheat oven to 450F .
Prepare a baking sheet with parchment paper and evenly spread carrots. Cover pan tightly with aluminium foil.
Set baking sheet into middle oven and cook for 15-20 minutes.
Remove aluminium foil and bake another 45 minutes.

Carrots can be reheated or used in carrot soup.
