Mulled Cider

Perfect for a cold, snowy afternoon after an outing.
1 quart fresh apple cider
1 T raw sugar
½ cinnamon stick
2 whole cloves
Dash of freshly grated nutmeg
Zest of 1 organic orange
1 T per serving of cognac or calvados (optional)
Combine all ingredients in a large saucepan. Bring to a boil and simmer for 20-30 minutes. Pour mixture through a fine sieve or cloth and discard solids. Keep cider warm in pan. Serve in mugs and add liquor, if desired.
