No-Bake Cheese Cake

Nut Crumb Crust
2 tablespoons melted unsalted butter
1 tablespoon sugar
¼ cup chopped walnuts
6 graham crackers, pounded into crumbs
pinch of cinnamon
pinch of nutmeg

Mix ingredients thoroughly and press into a 9 inch spring form pan. Chill while preparing the filling.

Cheese Filling
1 envelope gelatin
1 tablespoon lemon juice
peel from one organic lemon, finely grated
½ cup hot milk
¼ cup sugar
2 egg yolks
8 ounces cream cheese
1 cup sour cream

Place gelatin, lemon juice, lemon peel and hot liquid into food processor or blender.
Blend for a few seconds.
Add sugar, egg yolks, cream cheese and sour cream and blend a few seconds until smooth. Pour mixture into chilled crumb crust and place into refrigerator. Chill until set.
Decorate with berries shortly before serving.
