Carrot Banana Nut Loaf

1 cup brown sugar
1/2 cup canola oil
2 eggs, beaten
1 very ripe banana
1 tsp vanilla
1 cup coarsely grated carrots
1 1/2 cup whole wheat flour
1 tsp baking soda
1/2 tsp salt
1/2 cup chopped walnuts
1/2 cup raisins

Heat oven to 350 degrees F. Grease a loaf pan (9x5x3 inch).
Mix brown sugar, oil, eggs, banana and vanilla. Stir in carrots. Mix flour, baking soda and salt. Stir into banana mixture. Stir in walnuts and raisins until just combined.
Pour into pan. Bake 45-50 minutes or until long wooden toothpick inserted in center of loaf comes out clean. Cool completely, wrap in a plastic bag and refrigerate at least 24 hours before slicing.

This loaf freezes very well. It can also be frosted with a sour cream frosting
