Potato- Salmon- Salad

This is a very simple, yet delicious dish and can be served cold or warm. Fingerling or small red potatoes are most suitable. Smoked salmon can be obtained from the fish vendor at the Antigo Farmers Market.
6 medium sized potatoes, cooked skin on, cooled and cut into small chunks.
ΒΌ lb smoked salmon, flaked
1 small red onion or shallot, finely diced
1 Tb olive oil
1 tsp Dijon mustard
1 tsp balsamic vinegar
Salt and pepper to taste
Place olive oil, mustard, vinegar and onions into bowl and mix well
Add potatoes and coat with mixture, add salmon and toss gently, add salt and pepper to taste.
