Breaded Celery Root Fritters (Helga Bromberg)

Ingredients
1 celery root (available in the produce section)
1 pineapple, cut into chunks
Flour for dredging
1 egg, slightly beaten
Breadcrumbs
Oil
Salt
Lemon juice
Directions
Peel celery root and cut into ½ inch slices. Brush with lemon juice to prevent discoloration.
Coat slices with flour, dip into egg and coat with bread crumbs.
Heat oil in skillet and fry at medium low temperature until slices are tender.
Serve with chunks of pineapple and rice pilaf.
