After bringing home your purchases, you may want to try out this recipe:
Spring Salad with Asparagus and Soft-Boiled Egg
1 large egg 1 small head of leaf lettuce or 2 cups of spring mix 5 stalks of asparagus, tough end snapped off 1 tablespoon balsamic vinegar 1 tablespoon lemon juice 1 tablespoon honey 1 handful of fresh parsley or cilantro, finely chopped 1 teaspoon olive oil 1 small cube feta or blue cheese, crumbled salt and pepper
a small saucepan of water to a boil. Gently lower the egg. Simmer for
6-7 minutes. Remove and immediately run cold water over it. Peel under
water, set aside.
Arrange the lettuce on a plate, cut the raw asparagus into thin slices and scatter over lettuce.
Whisk together, balsamic vinegar, lemon juice, honey and fresh herbs,
whisk in olive oil. Dibble dressing over salad, crumble the cheese over
it, quarter the egg and place on top. Sprinkle with salt and pepper. Enjoy the crunch!
